3 cloves garlic, minced 4 cups tomato juice 1 teaspoon coarse salt 1/4 cup red wine vinegar 1/4 cup extra virgin olive oil 1 teaspoon fresh black pepper 6 cucumbers sliced 1/4 thick pieces 10 large, blanched and peeled tomatoes seeded, cut in half 2 medium white onions, chopped 1 ounce sliced almonds
1. Add the extra virgin olive oil and vinegar in a large bowl, whisking to mix. 2. Add tomato juice, chopped garlic, salt and freshly ground black pepper. 3. Whisk to mix. 4. Toss diced tomatoes, sliced cucumbers, sliced onion, and sliced almonds. 5. Cover with plastic wrap and refrigerate overnight.
